Roasted Butternut Squash Soup

Prep Notes

For this recipe I was inspired by Costco's prepared cubed organic butternut squash. But you can buy a whole squash, peel and cube it yourself!

1 onion, diced

2-5 cloves garlic, to taste

2 lbs. cubed butternut squash

6 cups bone broth

1 bunch kale, chopped

3-4 organic chicken sausages, crumbled

1 can organic coconut milk

salt, pepper

1 tsp turmeric

1 tsp oregano

2- 3 TBS coconut oil


1- Place cubed butternut squash on cookie sheet mixed with coconut oil, salt and pepper. Broil for 10-15 minutes until slightly brown.

2- chop onion and garlic, saute in pan with coconut oil. Add crumbled sausage (optional, for vegan version, add more vegetables instead. your choice, to taste)

3- wash and chop kale, steam for 2-3 minutes

4- add above ingredients together. Add 6 cups bone broth.

5- add can of organic coconut milk.

6- simmer for 20-30 minutes.


My recipes are to taste, and depending on what you have on hand. No sausage? Use ground grass fed beef. No kale? Use broccoli, green beans or some other veggie. The flavor in the soup comes mostly from the coconut milk and squash...enjoy!!
